  • One adobo sauce canned chipotle pepper
  • One medium poblano pepper
  • Two tbsp. olive oil divided
  • Two pieces garlic
  • 2 tbsp. tomato paste
  • One tbsp. adobo sauce canned
  • 1 small onion cut
  • One tbsp. red wine vinegar
  • 1 teaspoon. cumin
  • 1 ½ tsp. Salt
  • ½ tsp. pepper
  • ½ cup + 2 tbsp. water divided
  • 10 drops of liquid stevia

INGREDIENT NOTES:

TOFU:

  • Because it crumbles readily and has the texture closest to ground meat which is what we want choose tofu that is firm or extra firm.

PABLANO PEPPER:

  • This is main component that adds a faint earthy and peppery taste. If this isn’t available, use jalapeño peppers instead.

AVOCADO OIL:

  • Utilize oil(avocado) to saute the pablano peppers & tofu; we can done this in olive oil as well.

GARLIC &ONION:

  • Use finely chopped onion & garlic in this dish.

CHIPOTLE PEPPER WITH ABODE SAUCE:

  • Utilize chipotle pepper for a smoky, fiery taste. Don’t throw out the sauce, but look for canned chipotle chilies! It is also necessary for this recipe.

TOMATO PASTE:

  • Utilize tomato paste for a strong taste of tomatoes.

RED WINE VINEGAR:

  • Red wine vinegar is utilized for the acidity. Lime juice is also effective.

CUMIN:

INSTRUCTION:

  1. Press as much moisture out of the tofu as you can to drain it entirely.
  2. Crumble the tofu after patting it dry.
  3. Halve the poblano pepper and throw away the seeds.
  4. Cook in a hot saucepan till they get browned on both sides after drizzling it with two tbsp. of oil.
  5. Process the following ingredients in a food processor until they are smooth: onion, garlic, ½ cup water, pepper powder, red wine vinegar, salt, tomato paste, chipotle pepper, cumin, and adobe sauce.
  6. Include the remaining olive oil in the skillet (large) and heat it over medium-high heat.
  7. When heated, include the tofu and cook till the tofu gets brown around the edges, around four to five minutes.
  8. After adding the sauce to the skillet and stirring everything together, lower the heat to low and simmer for five minutes.
  9. Then, add the additional two tbsp. of water plus liquid stevia.
  10. Cook for five more minutes, or till the sauce get thickens.
  11. Your Keto Chipotle Sofritas are ready!

TIPS:

  • For a whole night, press the tofu. The texture will be more “meaty” the more moisture you can extract from the tofu. Cut the tofu block lengthwise, place both blocks on a dish coated with paper towels, place another plate on top, then use a heavy object to weigh it down.
  • Bake the tofu in the oven and then crumble it into the spice mixture if you don’t enjoy pan-fried tofu. Instead of cooking the poblano on the stove, you may use this approach to broil it.
  • Gradually pour in the water to prevent it from becoming very diluted or runny.
