INGREDIENTS

  1. One & half pounds of chicken
  2. Twelve ounces of kelp noodles
  3. One bunch of bok Choy or cabbage
  4. Two minced garlic cloves
  5. One teaspoon of fresh ginger minced
  6. Salt and pepper to taste
  7. Chicken marinade
  8. One tablespoon of coconut aminos/ soy aminos or tamari
  9. Half a teaspoon of sesame oil
  10. Half teaspoon minced garlic paste

Sauce

  1. Third-fourth cup of chicken bone soup
  2. Quarter cup coconut aminos
  3. One tablespoon of Sukrin gold fiber syrup
  4. Two teaspoons of sesame oil
  5. One tablespoon of rice vinegar
  6. One teaspoon of red pepper chili flakes
  7. Half teaspoon xanthan gum (optional)

INSTRUCTION

Make the marinade

  1. Place a bowl and add the garlic paste, sesame oil, and coconut aminos.
  2. Add the chicken to the marination mixture.
  3. Put it in the fridge for minutes (thirty).

Cook the chicken

  1. Add the chicken after thirty minutes in the slow cooker.
  2. Cook it for an hour or two until it becomes tender.
  3. Remove the chicken from the cooker (slow).
  4. Chop the cabbage.
  5. Add the ginger, garlic, and chopped cabbage first.
  6. Then add the chicken to the slow cooker.

Sauce making

  1. Place a bowl and add the chicken soup, coconut aminos, sweetener, sesame oil, rice vinegar, and red chili flakes (optional).
  2. Whisk it together.
  3. Pour the sauce into the cooker over the chicken and cabbage.
  4. Let it cook for an hour or two depending on the model of your cooker and heat setting.

Noodles addition

  1. When the time is almost over and just ten minutes left, wash your noodles with water.
  2. Soak them to soften them up.
  3. It is not required to add the cooked noodles.
  4. But I can add it to the cooker and cook it for ten minutes to warm up the noodles.
  5. If the sauce is looking too thin add the xanthan gum to stabilize its consistency.

TIPS

  • If kelp noodles are not easily available on your side.
  • You may easily replace it by spaghetti squash and lupin flour noodles.
  • Palm noodles, zucchini noodles, and veggie noodles are great alternatives.
  • Broccoli, green peas, red bell pepper, green bean, and any other keto-friendly vegetables of choice should be added to include veggies in the soup.
  • You can top up the soup with onion (green), and seeds (sesame).

SERVING SUGGESTIONS

  • You may serve the Crockpot chicken lo Mein with cauliflower rice.
  • It can also be served with other Chinese foods that have low-carb content and are keto-friendly.
  • This crock pot dish also goes great with roasted (asparagus) or noodles (zucchini).
  • Sunomono cucumber salad is also great to consume with this soup.

STORAGE INFORMATION

Fridge

  • Pour the soup in an air tight container for days (three-four).

Freezer

  • Pour the soup into the sealed container label it and store it for two to three months.

Heat instruction

  • You can heat your soup in a bowl (microwave-safe) for minutes (two to three).
  • Heat up your soup on the stove by adding some oil then add the soup and heat it until required.
