Keto French Onion Soup

Keto French Onion Soup is a low-carb twist on the classic French soup that’s perfect for anyone following a ketogenic diet. Instead of using bread or croutons, this recipe relies on the rich, savory flavors of caramelized onions, beef broth, and melted cheese to create a delicious and satisfying soup.

Ingredients:

  • 4 large yellow onions, sliced thinly
  • 4 tbsp. unsalted butter
  • 4 cups beef broth
  • 2 cups water
  • 1/4 cup dry sherry
  • 1 tsp. fresh thyme leaves
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 4 oz. shredded Gruyere cheese

Instructions:

  1. In a large pot or Dutch oven, melt the butter over medium heat.
  2. Add the sliced onions to the pot and stir to coat them in the butter.
  3. Cook the onions, stirring occasionally, for 30-40 minutes or until they are golden brown and caramelized.
  4. Add the beef broth, water, sherry, thyme, salt, and black pepper to the pot.
  5. Bring the soup to a simmer and let it cook for 20-30 minutes, or until the flavors have melded together.
  6. Preheat the broiler on your oven.
  7. Ladle the soup into 4 oven-safe bowls.
  8. Sprinkle the shredded Gruyere cheese over the top of each bowl of soup.
  9. Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
  10. Serve the soup hot, optionally garnished with additional thyme leaves.
