Recipe: Keto Morning Hot Pockets with Ham and Cheese

Ingredients:

For the Pastry:
  • 1 1/2 cups almond flour
  • 2 tbsp coconut flour
  • 2 tsp baking powder
  • 1/2 tsp xanthan gum (optional, but it improves texture)
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
For the Filling:
  • 4 slices of ham
  • 1/2 cup shredded cheddar cheese (or your favorite keto-friendly cheese)
  • 1/4 cup cream cheese, softened
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried parsley (optional, for garnish)

Instructions:

1. Preheat and Prepare:
  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Mix Dry Ingredients:
  • In a mixing bowl, whisk together the almond flour, coconut flour, baking powder, xanthan gum (if using), and salt.
3. Add Wet Ingredients:
  • In a separate bowl, whisk the eggs and melted butter until well combined.
4. Combine Wet and Dry:
  • Pour the wet ingredients into the bowl with the dry ingredients. Mix until a thick, sticky dough forms. This will be the pastry for your hot pockets.
5. Prepare Filling:
  • In another bowl, combine the softened cream cheese, shredded cheddar cheese, black pepper, garlic powder, and onion powder. Mix until smooth.
6. Shape the Hot Pockets:
  • Divide the dough into 4 equal portions. Roll each portion into a ball, then flatten it into an oval shape on the parchment paper.
  • Place a slice of ham on one side of each oval. Spoon some of the cheese mixture on top of the ham.
  • Carefully fold the other half of the dough over the ham and cheese to create a pocket. Seal the edges by pressing them together with a fork.
