This low-carb food substitutes radishes for potatoes, making it more akin to a salad than a traditional potato salad. They have a typical potato flavor.

Radishes have rapidly become the potato of choice for keto dieters. They taste like homemade fried potatoes if you coat them with pepper, then bake them in the microwave. This recipe follows the same methodology. Before adding the radishes to the potato salad, they were roasted at 350 degrees Celsius and to cool. The peel of the radish may cause the potato salad to turn to another color.

Ingredients:

  • Mayonnaise: 1 cup.
  • Chopped parsley: 2 tbsp.
  • Eggs: 4.
  • Olive oil.
  • Lemon juice: 1/2.
  • Dijon’s mustard: 1/4 cup.
  • Chopped dill pickles: 1/4 cup.
  • Pepper.

Instructions:

  1. Set the microwave temperature to 350 degrees.
  2. Chop the radishes into quarters.
  3. Add radishes and pepper, along with a little amount of olive oil, to a bag jar.
  4. Shut the bag and shake or massage to combine the ingredients.
  5. Arrange the radishes on a baking dish in the baking powder till they seem roasted.
  6. Allow it to cool.
  7. In the meantime, blend the sauce with lemon juice, red onion, capers, herb parsley, mustard, dill pickles, and pickle juice.
  8. Mix everything.
  9. Put the eggs and roast radishes.

Before roasting, peel the greens or use a daikon radish. Another common substitute for potatoes in low-carb cuisine is cauliflower. You may instead use chopped zucchini that is already gently cooked in place of the radish in this recipe. To make cauliflower potato salad, steam the cauliflower until it’s just about tender, then drain and let cool.
