Ingredients:

  • Dry white wine: 1/4 cup.
  • Ground black pepper.
  • Chicken broth: 1/2 cup.
  • Olive oil: 1 tbsp.
  • Capers: 1 tbsp.

  • Bread crumbs: 2/3 cup.

Instructions:

  1. Put some salt and pepper on the fish.
  2. Warm the furnace to 200 °F.
  3. Lightly whip the egg whites in a small basin.
  4. Place the bread crumbs to another plate.
  5. Next, coat each fish filet with a layer of egg whites and bread crumbs.
  6. Warm the loaf pan to a gentle simmer.
  7. After liberally misting one side of the fish with olive oil spray, place it oil side down in the pan.
  8. Coat the opposite side of the salmon well with cooking spray, then cook it for a further minute or so on each side, so that it is opaque and well done.
  9. Place in the heated heat on a dish and leave while you make the spicy sauce.
  10. In the same pan, melt butter over normal heat.
  11. Add lemon juice, wine, chicken stock, and the saved lemon halves.
  12. Season with pepper. Bring to a boil.
  13. Boil for up to four minutes on high heat, till the liquid is reducing approximately half.
  14. Toss in the capers, and toss in the lemon halves.
  15. Spoon the dressing across the fish, and garnish each filet with a wedge of lemon and some freshly picked parsley.
