Guys, I’m being completely honest. This must be made as soon as possible. Even though the “noodles” are wonderful on their own, when you add a ton of cheese, meat, and sauce, OMG. I can only say that.

Making Low Carb Lasagna: Some Tips

Before creating your actual lasagna, you may prepare these noodles ahead of time and store them in the fridge or freezer. Lift them off their original baking sheet (make sure they aren’t sticking) and then freeze them flat on a baking sheet coated with parchment paper. Place them in a ziplock bag(after freezing)

You can swap out the Classico sauce I used for the well-known low-carb Rao’s sauce.
You’re out of cottage cheese. Ricotta cheese can alternatively be used in place of this. However, I guarantee that you will adore cottage cheese in this lasagna, even if you don’t generally enjoy it.
If you ever want a fun twist, try this lasagna with spicy sausage and extra peppers.

Ingredients
  

Noodles

  • 2 eggs

  • 4 oz cream cheese softened

  • 1/4 cup parmesan cheese grated
  • 1 1/4 cup mozzarella cheese shredded, 130g

  • pinch of each: majoram, thyme, rosemary

  • 1/2 tsp tsp basil

  • 1/2 tsp oregano

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1/4 tsp salt

Filling

  • 1 lb ground beef

  • 1 1/2 cups of lower-carb pasta sauce

  • 3/4 cup mozzarella cheese, shredded 90g

  • 6 tbsp 2% cottage cheese 90g

  • 1/3 chopped onion

  • 1 oz finely chopped green pepper

  • 1 minced garlic clove

  • 1/2 tsp chili pepper flakes optional

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • Pinch of each: majoram, thyme, rosemary

  • salt and pepper to taste

Instructions
 

Noodles

  • Turn the oven on to 375 degrees.
  • Line baking dish(9x13) with parchment paper .
  • Mix the cream cheese9hand mixer) and eggs in a bowl.
  • Add spices and Parmesan cheese next. To mingle, blend.
  • Add the mozzarella cheese and combine thoroughly.
  • The mixture should be evenly layered within the baking dish.
  • 20 to 25 minutes of baking.
  • After baking, let the "noodles" cool for about 20 minutes in the refrigerator before cutting them into thirds. This yields three properly sized "noodle" layers for a loaf pan that measures 8.5 X 4.5 X 2.5.

Towards The Filling

  • Mix(over medium-high heat) ground beef, peppers, onion, and spices in skillet(large) . Brown the meat by continuing to cook.
  • Remove excess grease from the skillet and mix in 34 cup of your sauce with the meat. Simmer for ten minutes with the heat reduced to low.

Combining Everything

  • Fill the bottom of the loaf pan with 1/4 cup marinara sauce. the initial layer of "noodles" on top
  • The ground beef mixture is layered in thirds. A second "noodle" layer is placed on top, followed by 14 cup mozzarella cheese and 3 tbsp cottage cheese. Then do it again.
  • Add the remaining ground beef and mozzarella cheese to the top "noodle" layer.
  • Basil and a little parmesan are added on top. For 20 minutes, bake. Enjoy!
