Servings: 4 servings

Ingredients:

  • 4 large eggs
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons erythritol or preferred keto-friendly sweetener
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions:

  1. In a large mixing bowl, whisk the eggs until well beaten. Add the almond milk, melted coconut oil, and vanilla extract. Whisk until all the wet ingredients are combined.
  2. In a separate bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, whisking continuously until you have a smooth batter. Let the batter rest for 5 minutes to allow the flours to hydrate.
  4. Preheat your waffle iron according to the manufacturer’s instructions.
  5. Once the waffle iron is hot, lightly grease it with coconut oil or cooking spray to prevent sticking.
  6. Spoon a portion of the batter onto the preheated waffle iron, spreading it evenly. Close the lid and cook for about 3-5 minutes, or until the waffles are golden brown and crisp.
  7. Carefully remove the waffles from the iron and transfer them to a serving plate. Repeat the process with the remaining batter.
  8. Serve the keto waffles warm with your favorite keto-friendly toppings such as sugar-free syrup, whipped cream, fresh berries, or a dollop of almond butter.
