I’m thrilled to share one of my new favorite keto appetizers with you.

Cheddar and broccoli balls? Cheddar-Broccoli Bites? Frittered cheese balls? Chunks of broccoli with cheddar deep-fried? There are so many options, yet none of them adequately convey the deliciousness you are about to experience.

Oh, dear! When words fail, what should a culinary writer do?

Never mind, I’m too busy devouring these crunchy keto broccoli cheddar balls to care. Or bite-sized broccoli cheddar. or cheese bites that have been fried. whatever they may be.

IDEA FOR KETO FRIED CHEESE

I don’t fried anything in deep fat very frequently. It takes a lot of labour and cooking oil, and it may leave your house smelling like fried food for days.

Of course, I do enjoy a delicious keto fried chicken. Yet, in general, I choose pan-frying or air frying. less hassles and less mess!

But these cream cheese avocado bacon nibbles from Great Grub Tasty Treats gave me the idea to develop this recipe. These attracted my attention due to the abundance of melty cheese flowing out of a flaky crust.

DEEP-FRYING KETO BREADING

Before attempting these keto fried cheese balls, I did a lot of research. The key was perfecting the keto breading, and I knew my greatest chance at a super crispy coating lay with pig rind crumbs.

The gluten in bread makes it possible for the bread crumbs that are typically used to top fried dishes to stay and become crisp. I was concerned that the gluten-free keto pork rind breading would fly off the cheese balls when they were dropped into the heated oil.

I made the decision to try a double coating strategy. The balls were coated in coconut flour before being coated in beaten egg and then dredging in pork rinds.

IS AN AIR FRYER CAPABLE OF PRODUCING FRIED CHEESE BALLS?

It will please those of you who dislike deep frying to know that this dish can be prepared in an air fryer. That’s how I tried a few of the balls, and while they aren’t exactly the same, they are still excellent.

Make sure the cheese balls are frozen when cooking, and follow the same precise instructions. Use some of the perforated air fryer parchment liners or brush some oil into the air fryer basket to prevent sticking.

To help the balls crisp up, brush or spray avocado or coconut oil on the tops of the balls.

Ingredients
  

Cheese-filled broccoli balls

  • 1 1/2 cups of thawed and drained frozen broccoli (about 6 ounces)
  • 8 ounces of softened cream cheese
  • 6 ounces of grated cheddar
  • 1/4 tsp. salt
  • 1/2 tsp. of pepper
  • 1/4 tsp. red pepper flakes
  • 3 crushed or chopped garlic cloves

Breading keto

  • Coconut flour, 2 tablespoons
  • Crushed pork rinds in 1 1/2 cups
  • 1 teaspoon of cream
  • two huge eggs

Cooking Oil

  • for frying, 3 to 4 cups of oil

Instructions
 

  • Place the broccoli in a big bowl after finely chopping it. Salt, pepper, garlic, cream cheese, cheddar, and pepper flakes should also be added. Use a fork to thoroughly mix everything.
  • Place the mixture balls, each no more than 1 inches in diameter, on a baking sheet or pan that has been lined with waxed paper. About 30 balls should be available. 3 to 4 hours of freezing.
  • On a shallow dish, spread the coconut flour out. Take a bowl(large) .Whisk the eggs and cream. In another medium bowl, spread the pork rinds out.
  • Frozen oil should be added to a deep, sturdy, 4-quart saucepan and heated to 350°F. Keep the temperature between 330 and 350 degrees Fahrenheit. Much hotter and the filling won't defrost while the outside of the bits cooks too soon.
  • Each ball should be lightly coated with coconut flour before being dipped in the egg and dusted with prok rind crumbs.
  • When the oil is hot, add 4 to 6 balls and cook for about 3 minutes, or until golden brown. Remove(slotted spoon). let drain on a dish(covered with paper towels).
  • Continue with the remaining balls.
  • Serve at room temperature (don't serve hot or the melty cheese will burn your mouth!).

  1. The recipes look great. I want to make the broccoli cheese balls but I don’t eat pork. Is there something else I can use instead of pork rinds?

    What is the correct salt measurement? Surely it doesn’t require 1/4 CUP – maybe 1/4 teaspoon?
