- Four pounds of pork belly
- One and a half tablespoons salt
- Quarter cup Cuban mojo
- One teaspoon of baking soda

Pork belly
- You can buy the pork belly with skin on it. It gives the dish a good brown color and makes it extra crispy. Use the excess meat from the pork belly to make sous vide or air fryer pork belly instead.
Kosher salt
- Season it for the flavor.
Cuban mojo
- Store-bought Cuban mojo is used in this recipe. You can also make it at home. It can be made up by adding garlic, juice of orange (sour), oregano, oil, salt, and crushed pepper.
Baking soda
- You can use the baking soda to dehydrate the skin. It makes the dish extra crispy and also gives a nice brown color.
Juice of lime:
- Lime juice dissolves the baking soda and adds brightness. Also gives a tangy flavor to the dish.

INSTRUCTIONS
- Prepare the pork belly Place the pork belly onto the cutting board.
- Make the cut in the cross on the skin carefully don’t cut through the skin completely.
- You can also make cuts in the skin instead of the skin.
- It works in both ways.
- Cut the pork belly, into these slices (one and a half inches)
- I prepared it with Cuban mojo (store-bought) with salt.
- You can also prepare it at home like I mention above in this recipe.
- Marinate the pork belly First, wash the pork belly with water and drain it properly.
- Add the thin strips of pork belly to the marination mixture and toss it properly to evenly coat the strips.
- Douse it for about two hours or the whole night.
- Heat the oven by setting its temperature to three hundred degrees Fahrenheit or one forty degrees Celsius.
- Take a parchment paper or baking paper and place it on the baking dish.
- Brush with baking soda Take a small vessel add the baking soda and lime juice and mix it with a whisk.
- Take the strips place them on the baking sheet and spread the baking soda with the help of a brush evenly.
- Roast the dish Put the dish in the oven and roast it for ninety minutes.
- When they become crispy and brown according to your sense of taste take out from the oven and serve.
- You can also deep fry it if you can easily deal with hot oil.
- Preparing the pork belly follows the similar method.
- Then pour the vegetable oil of your choice in the frying pan and heat up the oil over medium heat.
- Add the strips to the oil carefully and fry each side for thirty to forty seconds.
- Remove the strips when it is done and place them on the paper towel.
- Fry in batches to get properly cooked.
- Your Keto Chicharron is ready now.
TIPS
Broil it
- When the strips were about to be done I turned on the broil for fifteen to twenty seconds to make it extra crispy. If you don’t like the extra crispy strips just skip this step. Choose the right cut of pork Always fetch the pork which has equal fat and skin. If pork has less fat it won’t dissolve to make it crispy.
Marinade:
- You can also use a different marinade than mojo. Sometimes I switch it with pork tenderloin marinade or make a quick marinade with oil, citrus, and a combination of seasonings cumin, paprika, cayenne pepper, and onion powder.
Storage information:
Fridge:
- It is best to consume fresh. You can also stock it up in a sealed vessel for three to four days.
Freezer:
- Put the Keto Chicharron in a safe tight container. Stock it for up to 0.5 year. You can directly put them into the oven, otherwise, they will become mushy.
Reheat directions:
- Place the strips in the oven for eight to ten minutes at three-fifty degrees Fahrenheit or for three to four minutes in the air fryer at three-seventy-five degrees Fahrenheit.

Sandwich
- You can the sandwich by using sugar-free BBQ sauce and lettuce.
Tacos:
- You can make the tacos with crispy pork belly slices, avocado, cilantro, and salsa.
Rice bowl:
- You can make your own rice bowl by using cauliflower rice, sliced radish, and cucumber, or stir-fry some veggies. Sprinkle some sesame seeds, and add spicy mayo.
Salad:
- You can make the cabbage or cucumber salad and slice the pork belly over it.
