Keto Falafel

Keto Falafel is a delicious and healthy twist on the traditional Middle Eastern dish. It replaces the typical high-carb chickpeas with a combination of nutrient-dense ingredients such as cauliflower, almond flour, and a variety of flavorful herbs and spices. This low-carb version allows you to enjoy the delightful flavors and textures of falafel while staying within your ketogenic diet.

Ingredients:

  • 2 cups cauliflower florets
  • 1/2 cup almond flour
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Steam the cauliflower florets until tender, then drain them well and allow them to cool slightly.
  3. Transfer the cooled cauliflower to a food processor and pulse until it reaches a rice-like consistency.
  4. Place the cauliflower rice in a clean kitchen towel and squeeze out any excess moisture.
  5. In a mixing bowl, combine the cauliflower rice, almond flour, minced garlic, parsley, cilantro, cumin, coriander, paprika, cayenne pepper, salt, and black pepper. Mix well until the ingredients are evenly incorporated.
  6. Form the mixture into small falafel patties, about 2 inches in diameter, and place them on the prepared baking sheet.
  7. Drizzle the falafel patties with olive oil to promote browning and crispiness.
  8. Bake in the preheated oven for 15-20 minutes, or until the falafel is golden brown and cooked through.
  9. Remove from the oven and allow the falafel to cool for a few minutes before serving.
