Recipe: Keto Garlic Parmesan Knots

Ingredients:

For the Dough:

  • 2 cups almond flour
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

For the Garlic Butter Topping:

  • 1/4 cup unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

For the Dough:
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are completely melted and well combined.
  3. In a separate bowl, whisk together the almond flour, baking powder, garlic powder, and salt.
  4. Add the eggs to the dry mixture and mix until a dough forms.
  5. Add the melted cheese mixture to the dough and knead until everything is well combined. If the dough becomes too sticky, you can wet your hands to prevent sticking.
  6. Roll the dough into a ball and divide it into 12 equal portions.
  7. Roll each portion into a rope and tie it into a knot shape. Place the knots on the prepared baking sheet.
  8. Bake in the preheated oven for 12-15 minutes or until the knots are golden brown.
For the Garlic Butter Topping:
  1. In a small saucepan, melt the unsalted butter over low heat. Add the minced garlic and cook for about 1-2 minutes, or until fragrant. Remove from heat.
  2. Stir in the chopped fresh parsley, grated Parmesan cheese, salt, and pepper into the garlic butter mixture.
