Keto Halloween Cookies

Treats or tricks? Of course a keto treat! Just for you, I’ve provided the simplest Keto Halloween Cookies. Hold it together, trick or treat, and keep it keto.

Funny thing is, before becoming keto, I would have never baked cookies for Halloween.

Halloween is a cunning, little rascal. Every year it comes around so quickly that I can’t keep up. Treats or tricks? I will choose the latter!

I hope there are kids there for this one! Just to draw those spooky features, eyeballs, and silly lips onto the pumpkin-shaped biscuits, some chocolate is melted, some egg white is mixed with powdered sugar.

INGREDIENTS

Cookies

1/4 cup coconut flour and 3/4 cup almond flour
1/4 cups powdered erythritol, or any preferred sweetener
1/2 tsp. baking powder
A optional 1/2 teaspoon of turmeric powder gives the yellow hue.
1 teaspoon dried orange zest or 1/2 teaspoon fresh orange zest
1 pinch salt
1/8 tsp. xanthan gum
1 big egg, whisked, at room temperature.
1/4 cup of butter
IMO syrup, two tablespoons

Decoration

1/4 big egg white, optional, and 1 ounce of melted dark chocolate
2 tablespoons of optional powdered erythritol
optional 1/4 tsp matcha green tea powder

Cookies

Line baking sheet with parchment paper. Preheat oven to 320°F . Get the ingredients ready.
The dry components must be mixed. the beaten egg in. From this point on, I advise mixing the dough with your hands until fully mixed.
Butter and IMO syrup should be combined in a medium pot. Stirring often over medium-high heat will cause the ingredients to melt and thoroughly mix. Place aside and allow to warm up to room temperature. When adding the mixture to the dough, knead it thoroughly.
Layers of the dough should be 1/8″ thick. To prevent the dough from sticking, help yourself to some parchment paper or aluminum foil.
Use a 2-inch circular cutter to cut out 16 discs, or simply serve yourself to a glass. On the cookie sheet, put discs .

13 minutes is the approximate baking time. Watch carefully to avoid burning. The warm cookies should be soft enough to melt in your mouth.
Be imaginative! To make the cookies come to life, use a knife or fondant toolkit! Then either wait for the cookies to firm up and cool completely or add more decoration.

Decoration

Melt the chocolate over medium heat before using it to draw on pumpkins or faces.
To create a dense, white paste, combine the egg white with powdered sweetener. You can doodle on it. To give the stems color, combine some of this mixture with matcha powder. To acquire the perfect crunch, the cookies can spend the night on the counter.
